On day Two of the Fall Fruits Festival, the celebration is PUMPKINS! Go over to Stop and Smell the Chocolates for more great recipes. This recipe came from a lovely lady named Bonnie - my kids gobble them up like crazy!
Pumpkin Cookies
Cream together 1 cup of butter and 1 cup of sugar.
Add:
1 egg
1 cup pumpkin puree (from can or freshly made)
1 tsp cinnamon
1 tsp vanilla
2 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
Add nuts if desired. Drop by teaspoon onto cookie sheet. Bake at 375 degrees for 15-20 minutes. Test like a cake with a toothpick.
Icing
Melt 3 tbsp butter, add 4 tbsp milk and 1/2 cup brown sugar. Boil for 2 minutes and cool. Add 1 cup of powdered sugar and 1 tsp vanilla. Drizzle icing over cooled cookies. Enjoy!
